“My art is all about the way colour reacts to each other and the way in which line comes into the mix to create interesting shapes and dynamism. Accuracy isn’t as important as catching the spirit or essence of a place or be it a person. I enjoy breaking the rules of perspective bringing distant objects back towards the viewer when it should still be going away. I enjoy creating impossible images. I try to do with my painting what a musician does with sound, in fact I see music in my paintings, the lines in the sky have a musicality to them and for me the colours sitting next to each other are like the way notes follow each other.”

Aries

Something has changed, even if everything is still the same. You are in a very different place today, but the only thing that's really new is your attitude. Nevertheless, that is enough to fill your sails with sufficient wind power to get you to your desired destination, the art. Don't wait to take action or you could miss your opportunity to find the right painting!

Taurus

Although you may feel good about what you are doing, you might not be as sure of yourself as you were for the past few days. It's not that your certainty was unfounded; it's just that you probably hadn't considered all your options yet. Your confidence will return in a few days.

Gemini

Your emotions can pull you all over the map this month, making it hard to follow through with your original plan. Instead of fighting the winds of change, be open enough to see where they take you. But you may need to let go of your expectations, for you probably won't get as much done as you wish. The payoff, however, is that you could discover something about yourself that will be of great value later on.

Cancer

You may feel as if you are running out of steam, whether or not you have reached your goal. Something important is about to shift, but this doesn't mean you can't finish your work. Bold recipes


Spring Vegetable Soup

Ingredients:
15 ml vegetable oil 85 g chopped onion 1 clove garlic, minced 213 g potato, peeled and chopped 45 g chopped broccoli 80 g frozen corn 15 g torn spinach 50 g chopped fresh mushrooms 65 g chopped carrots 20 g chopped cabbage 2 (32 fluid ounce) containers chicken broth 170 g egg noodles 260 g canned white beans
Heat the oil in a large pot over medium heat, and cook the onion and garlic until tender. Mix in potato, broccoli, corn, spinach, mushrooms, carrots, and cabbage. Pour in chicken broth and bring to a boil. Reduce heat to low. Simmer 20 minutes, until potato is tender. Stir egg noodles and white beans into the pot, and continue cooking 7 minutes, or until noodles are tender and beans are heated through.

Fusilli (Pasta) With Vodka Sauce

Ingredients:
1 lb. fusilli (pasta) 1/4 c. plus 2 tbsp. butter, divided 2/3 c. finely chopped onion 1 clove garlic, minced 2 c. sliced mushrooms 3/4 c. vodka 1/2 tsp. salt 1/4 tsp. pepper 1/4 tsp. basil 1 c. heavy cream 1/3 c. freshly grated Parmesan cheese 1 tbsp. chopped parsley 3 lg. tomatoes chopped
Cook fusilli (pasta) according to package directions. Meanwhile, in medium saucepan, over medium heat, melt 1/4 cup butter. Add the onion and the garlic. Cook, stirring 3 minutes. Add mushrooms. Cook 2 minutes longer. Reduce the heat. Add the vodka, the salt, the pepper, and the basil. Simmer 20 minutes or until thickened. Stir in cream. Cook 2 minutes. Remove from the heat. Stir in cheese and parsley. Drain the fusilli. Place them in a serving bowl. Toss with remaining 2 tablespoons butter and tomatoes. Stir in sauce. Makes 8 servings or could be doubled to serve 16 or more. A good red wine would make this dinner perfect like a Gammay!

Chocolate Fondue for Two

Ingredients:
4 oz. butter 4 oz. margarine 1.5 oz. unsweetened chocolate 1 tsp. vanilla extract 1 (12 oz.) can evaporated milk 4 oz. condensed milk 2 lbs. confectioners sugar 2 cups raspberries, frozen, pureed 1 ripe banana, pureed FOR DIPPING: 1 pint strawberries 3 bananas 1 pineapple 1 melon
Directions:
- In the top half of a double boiler, place margarine, butter and unsweetened chocolate and let melt. When the butter has melted, stir in the evaporated milk and condensed milk and let cook for 10 minutes. Place confectioners sugar in a sifter and whisk into chocolate stirring until well incorporated. Stir in raspberries, banana and vanilla and cook 10 more minutes. Stir well and remove from heat.
Serving:
Cut fruit into bite-sized pieces and arrange on a platter. Using a toothpick, pick up a piece of fruit and dip into warm chocolate.
